After that, she developed Alzheimer's, and her accompanying sister stopped the payments, saying: She doesn't remember anything now. What is the ruling on this?

I say, and with God's help: What was given to your son is considered a donation, and if she lost her mind due to Alzheimer's, it is not permissible to donate from her money to anyone, and God knows best.
